Ingredients for this Fruit Platter Recipe

To make a brunch board with pancake syrup, you will need the following ingredients:

  1. Pancake Batter: Use your favorite pancake mix.
  2. Powdered sugar: This is the perfect sweet touch and elevates the presentation.

Seasonal fruits:

These fruits are prime in the spring through late summer.

  1. Fresh Berries: I like to use strawberries, blueberries, and raspberries:
  2. Grapes: Use green and purple grapes for some color and flavor contrast.
  3. Melons: Add watermelon (not pictured here but a great option for summer fruit trays) and cantaloupe.

Syrups:

  1. Maple syrup
  2. Chocolate syrup
  3. Strawberry syrup

How to Make a Fruit Platter

Use a mason jar lid or a mold to make your pancakes. Pour just enough pancake batter to fit into the molds. Then cook each pancake over medium heat on each side for about 2 minutes.

Once you begin to see bubbles forming on the batter side, flip the pancakes and cook on the other side for another 2 minutes. Continue this process until all of the pancakes are cooked.

To assemble your pancake brunch board:

Use a large cutting board, or set out sheets of parchment paper on a flat surface. Assemble your golden brown pancakes in your desired shape; a heart shape, an “S” shape, or in a row.

Sprinkle the pancakes with powdered sugar. Then pour your syrups into small separate bowls or little ramekins and place them on the board or platter.

Be sure to thoroughly wash and dry your fruit, then arrange the fruit all around the pancakes and bowls of syrups in separate little piles. Make a little pile of strawberries, a small pile of blueberries, etc.

Tips and Variations for Your Fruit Platter

  • Want to add more fruits? Peaches, cherries, and figs hit their prime in late summer. For more specialty offerings try mango or kiwi.
  • Use fruits that are in season. When fruits are in their prime, they’re at their best, taste and looks-wise.
  • Ensure all of your fruit is diced and ready for placement before beginning your fruit tray.
  • Make your brunch board look bountiful by filling up white space with garnishes like fresh herbs (like mint or basil) or fresh-cut flowers.
  • While I love the breakfast theme, you can swap the pancakes for muffins or pastries. And instead of syrup, try dipping sauces like Nutella, cream cheese dip, and honey.
  • Prepare the fruit platter up to 1 day in advance and make the pancakes the day of. Store leftovers in an airtight container in the fridge for up to 3 days.

All you need to make a platter of fruit is a variety of at least 3 different fruits. Switch them up based on availability and what’s in season. I suggest strawberries, melons, and grapes as a delicious foundation.
