The Perfect Pancake and Fruit Platter

The perfect pancake and fruit platter doubles as a brunch charcuterie board. Served with fluffy mini pancakes, fresh seasonal fruit, and three different syrups this is one of the best fruit platter ideas!

Ingredients

  • 4 cups Pancake Batter
  • Powdered sugar

Seasonal fruits:

  • Strawberries
  • Blueberries
  • Raspberries
  • Green grapes
  • Purple grapes
  • Watermelon
  • Cantaloupe

Syrups:

  • Maple syrup
  • Chocolate syrup
  • Strawberry syrup

Instructions

  • Use a mason jar lid or a mold to make your pancakes. Pour just enough pancake batter to fit into the molds, cook each pancake over medium heat on each side for about 2 minutes. 
  • Once you begin to see bubbles forming on the batter side, flip the pancakes and cook on the other side for an additional 2 minutes. Continue this process until all of the pancakes are cooked. 

To assemble your pancake brunch board:

  • Use a large cutting board, or set out sheets of parchment paper on a flat surface. Assemble your golden brown pancakes in your desired shape; a heart shape, “S” shape, or in a row. 
  • Sprinkle the pancakes with powdered sugar. Now pour your syrups into small separate bowls or little ramekins and place them on the board or platter. 
  • Be sure to thoroughly wash and dry your fruit, then arrange the fruit all around the pancakes and bowls of syrups in separate little piles. Make a little pile of strawberries, a small pile of blueberries, etc. 
  • Get as creative as you want with your fruit platter brunch board, and enjoy!
