The perfect pancake and fruit platter doubles as a brunch charcuterie board. Served with fluffy mini pancakes, fresh seasonal fruit, and three different syrups this is one of the best fruit platter ideas!
Use a mason jar lid or a mold to make your pancakes. Pour just enough pancake batter to fit into the molds, cook each pancake over medium heat on each side for about 2 minutes.
Once you begin to see bubbles forming on the batter side, flip the pancakes and cook on the other side for an additional 2 minutes. Continue this process until all of the pancakes are cooked.
To assemble your pancake brunch board:
Use a large cutting board, or set out sheets of parchment paper on a flat surface. Assemble your golden brown pancakes in your desired shape; a heart shape, “S” shape, or in a row.
Sprinkle the pancakes with powdered sugar. Now pour your syrups into small separate bowls or little ramekins and place them on the board or platter.
Be sure to thoroughly wash and dry your fruit, then arrange the fruit all around the pancakes and bowls of syrups in separate little piles. Make a little pile of strawberries, a small pile of blueberries, etc.
