This recipe brings back so many childhood memories. There were many nights that fried potatoes and hot dogs were dinner! A darn good dinner too. Such a quick and easy, inexpensive, and delicious recipe!
Gather your ingredients:
One of the best parts about this recipe is how simple it is to make. With only a few staple ingredients, you will have the ultimate side dish, or main dish in no time at all!
Here is what you will need to get going:
- Russet potatoes: you can most certainly use other variations, like Yukon gold, red, or gold; but cooking times will vary because some take longer to cook than others.
- Smoked sausage: get the smoked sausage out of the deli section of your grocery store. I tend to use beef or turkey smoked sausage for most of my recipes.
- Vegetables: grab some bell pepper, the color does not matter. Red, yellow, or green, whichever you prefer. You will need some onions as well.
- Seasoning: Like I ALWAYS say, please adjust the seasoning according to your liking! These measurements are perfect for me and my families palate! Feel free to add paprika, red pepper flakes, or any other seasoning for added flavor.
You will definitely need a medium to large skillet with a lid to make the best fried potatoes. If you do not own a cast iron skillet, I highly recommend that you get one!
How to make fried potatoes sausage and onions:
First you will need to peel your russet potatoes. Once they are peeled, give them a quick rinse off. Next you will dice them into bite size cubes. Some people prefer their potatoes to be sliced, that will work as well.
Place the diced potatoes in a bowl of water while you prep the other ingredients. This is optional, but it will help remove some of the starches, and prevent the potatoes from turning brown.
Then it is time to slice up the smoked sausage. Slice them into about a quarter inch thick-sized slices. You can also start by slicing the sausage down the middle into two halves, then slicing it so that you have smaller pieces.
Dice your bell peppers and onions into small pieces and set them aside.
Add the vegetable oil into the skillet and heat it up over medium high heat for about three to five minutes. Gently add the sausage into the skillet and fry it for about five minutes, stirring every 30 seconds so that it does not burn.
Drain the water from the potatoes if you added it. Pat them dry with paper towels. Now add the potatoes, bell peppers, and onions directly into the skillet with the smoked sausage.
Sprinkle all of the seasoning over the potato mixture. Use a spatula to lift and stir the mixture up so that everything is evenly combined.
Place the lid over the skillet and allow it to cook for about seven minutes. Remove the lid and gently lift up and flip the potatoes. Careful not to break them up too much.
Leave the lid off and fry everything for another seven minutes. Remove them from the heat, and enjoy!
Do I need to boil my potatoes before frying them?
No you do not need to boil the potatoes before frying. Using the vegetable oil helps tenderize the them as they fry. Even more, placing the lid on the skillet is super important because it traps the moisture to help them cook thoroughly.
Why are my fried potatoes mushy?
If you leave the lid on the skillet too long, they will get super tender. Then when it is time to turn them, they will be mushy instead of fried with a crisp.
Be sure to remove the lid after the first seven minutes, and keep it off so the they can fry and crisp up. Another PRO-TIP, use a spatula to lift and flip the them instead of stirring them up.
Omit the meat from the fried potatoes:
If you do not want to add the meat, you can easily make the dish without it. Simply add the potatoes, onions, and bell peppers instead. You will fry them up just the same, just skip the smoked sausage part.
What to eat with this sausage and potato skillet:
This is such a versatile dish because you can eat it as a stand-alone meal, or as a side dish. We love to eat the fried potatoes for breakfast as a side to a delicious omelet or frittata.
How to store and reheat leftovers:
If there are any leftovers, let them completely cool down, then place them in an airtight container with a lid. You can put them in the refrigerator and store them for up to three days.
To reheat them, simply keep them in the microwave safe container, and microwave them on the reheat mode for about two minutes

- 1/2 cup Vegetable oil
- 1 cup Smoked sausage, sliced into bite size pieces
- 3 medium Russet potatoes, diced into small cubes
- 1/4 Bell pepper, diced (any color pepper will work)
- 1/4 medium Onion, diced
- 1/2 tablespoon Seasoned Salt
- 2 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon black pepper
- Heat the oil in a skillet (that has a lid), over medium high heat. Gently add the sliced smoked sausage into the skillet and cook for 5 minutes. Turn constantly so that the meat just turns brown instead of burning.
- Next add the potatoes, bell pepper, and onions to the skillet. Sprinkle all of the seasonings over the potatoes: the seasoned salt, garlic powder, onion powder, and black pepper.
- Stir the potatoes up until all of the ingredients are combined, and the seasonings are evenly coating the mixture.
- Place the lid on the skillet and allow the potatoes to simmer for 7 minutes. Open the lid and use a spatula to sort of lift and turn the potato mixture over. Careful not to break the potatoes up too much, as they will be tender.
- Leave the lid off and allow the potatoes to fry for another 7 minutes. Keep an eye on them to see if they should be turned again so they do not burn.
- Remove from the heat and enjoy!
