To make fluffy old fashioned pancakes, you will need the following ingredients:

How to make homemade pancake mix

Make a well in the center of the flour mixture for the wet ingredients and gently pour in your milk, melted butter, vanilla extract, and egg. 

Stir the mixture up until everything is fully incorporated. There may be some air bubbles in the mixture, but it should be fairly smooth.

Warm up a cast iron skillet over medium heat. Spread a stick of butter into the pan for added flavor, and to prevent sticking. 

Ladle in about ¼ cup of the pancake mix into the hot skillet. If making more than one at a time, leave at least 2 inches between each pancake. The mixture will spread out as it cooks. 

Once you begin to see bubbles in the pancake mixture (after about 1-2 minutes), it is time to flip. Flip the pancake and cook on the other side for 1-2 minutes. 

ONLY FLIP THE PANCAKES ONE TIME!

Once the pancakes are done, remove them from the large skillet and repeat the process until all of the flapjacks are made.

  • Ensure the baking powder is fresh by mixing a teaspoon of baking powder into a cup of hot water. If it fizzes, use it. Otherwise, the pancakes will be flat and dense.
  • Do not overmix the pancake batter. Overmixing develops the gluten which results in tough pancakes.
  • Some recipes call for adding 1 tablespoon of vegetable oil to the batter.
  • If time allows, let the pancake batter rest for at least 5 minutes so the batter has time to thicken. This makes the pancakes more airy, and even fluffier.
  • You can swap the regular milk for buttermilk to make buttermilk pancakes. The acid in the buttermilk activates the baking soda, causing the pancakes to rise more. So if you like thick, tall pancakes, this is the way to way to go!
  • This pancake recipe can be prepared on a griddle if necessary. This may be ideal if you are making a larger batch. Just spray with cooking spray before adding batter to the hot griddle.
