Ingredients for this Grilled Zucchini and Squash Recipe

You will need the following ingredients:

  1. Zucchini: Although this is technically a fruit, zucchini is often referred to as a vegetable. It has subtle sweet notes but is mildly flavored, making it perfect for seasoning and adding to various recipes.
  2. Yellow squash: This summer squash has a slightly nutty taste with peppery notes. It is naturally tender but softens even more as it cooks.
  3. Onion: Onion complements the grilled veggies and adds a fresh flavor.
  4. Olive oil: Use this so the vegetables crisp up.
  5. Seasoning: Add seasoned salt, garlic powder, and black pepper.
  6. Dried herbs: Use dried basil and dried oregano for a minty, peppery, pungent flavor.

How to make Grilled Zucchini and Squash

Preheat your gas grill to medium-high heat, or make sure the charcoal grill reaches 350 degrees F. Wash and dry your zucchini and squash to get off any debris. Then slice them into “coins’  about 1/4-inch thick slices and add them to a large bowl.

In a small bowl, combine the olive oil, seasoned salt, garlic powder, basil, oregano, and pepper. Stir well to create a seasoning mixture.

Add the seasoning mixture into the bowl with the zucchini and squash, and toss it around until everything is coated. 

Place the seasoned zucchini and squash slices onto a grill tray, and cover it with foil. Then place the grilling tray onto the preheated grill. Cook for about 10 minutes undisturbed.

Now remove the grilled zucchini and squash from the grill and let them cool down for 2-3 minutes before serving.

Tips and Variations

  • When selecting zucchini and squash, ensure they are firm with no bruising.
  • Stick to medium sized squash because larger squash tends to have more water in them.
  • When slicing the vegetables, ensure they are roughly the same size so they can cook evenly.
  • If time allows, you can marinate the zucchini and summer squash. Add some fresh lemon juice to the seasoning and let the veggies sit for at least an hour in the fridge.

In order to prevent the vegetables from getting soggy, do not overcook them. The cook time should be no more than 10 minutes in total.

How do you cut zucchini and squash for grilling?

Zucchini and squash can be quartered (like in this grilled zucchini and squash recipe) or sliced lengthwise for spears. It just depends on personal preference.

However, I suggest making sure they are not sliced too thin because they will soften too quickly and become mushy.

Should you salt zucchini and squash before grilling?

Some people salt sliced zucchini and squash before cooking in order to draw out excess moisture. This is an optional step to prevent the vegetables from becoming soggy. But the way we’re preparing the veggies, excess moisture should not be an issue.
