I throw in cheese, onions, and plenty of seasoning for a savory side that works for breakfast or dinner. It’s more filling than toast and more fun than other potato side dishes. Get the waffle maker warmed up because we’re about to make something absolutely irresistable!

Ingredients for Potato Waffles Recipe

You will need the following ingredients:

  1. Mashed potatoes: Use previously cooked mashed potatoes (try one of my mashed potato recipes — Delicious Steakhouse Mashed Potatoes or Garlic and Herb Mashed Red Potatoes). You can always whip them up fresh, but that defeats the purpose of making this a quick, convenient meal.
  2. Whole Egg: Lightly beaten to help bind everything together.
  3. All Purpose Flour: Just a bit of flour to give the waffles structure and help them crisp up.
  4. Seasoning: I use Cajun seasoning, garlic powder, and black pepper for a kick of flavor, but feel free to adjust the spices to your taste.
  5. Onion: Shredded yellow onion adds a bit of sweetness and texture.
  6. Green onion: Diced green onions give a fresh pop of color and flavor.
  7. Cheddar cheese: Shredded cheddar brings that cheesy goodness to the mix.

How to Make Potato Waffles

Start by preheating your waffle iron to a medium-high setting. While it heats up, combine the mashed potatoes, lightly beaten egg, flour, Cajun seasoning, garlic powder, black pepper, shredded yellow onion, diced green onion, and shredded cheddar cheese in a large mixing bowl. Stir everything together until fully mixed.

Once the waffle iron is ready, spray it with non-stick spray and scoop about a cup of the potato mixture into the center, spreading it out slightly.

Close the waffle iron and cook until the waffle is golden brown and crispy. When it releases easily from the waffle iron, it’s done.

Ingredients

  • 4 cups Mashed potatoes previously cooked
  • 1 whole Egg lightly beaten
  • ¼ cup All purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Garlic powder
  • ½ teaspoon Black pepper
  • ½ yellow Onion shredded
  • ¼ cup Green onion diced
  • 1 cup Cheddar cheese shredded

Instructions

  • Heat up a waffle iron to the medium high heat setting. While that is heating up, begin mixing your potato waffle batter, 
  • Add your mashed Potatoes along with the lightly beaten egg, flour, cajun seasoning, garlic powder, black pepper, shredded onion, green onion, and shredded cheddar cheese, into a large mixing bowl.
  • Use a large spoon to mix the potato mixture up until everything is fully combined. 
  • Spray your waffle iron with a non-stick spray. Now scoop about one cup of the potato waffle batter into the center of the waffle iron, and spread it out a bit. 
  • Close the waffle iron and allow it to cook according to your waffle iron (until it is golden brown and crispy). 
  • Once the potato waffle is golden brown and releases easily from the waffle maker, it is done. Continue cooking each waffle until you use up the remaining potato mixture. 
  • Serve alongside your favorite breakfast with bacon and eggs, or as a side dish for lunch or dinner, and enjoy!
