- Tomatoes: you will use the tomatoes to make a rich and flavorful broth for the soup.
- Tomato Bouillon: the tomato bouillon is important because it has a hint of chicken bouillon mixed in and it adds all of the salt content to the soup.
- Onion: you will blend the onion with the tomato and garlic to make the base for the sope de fideo

Peel your garlic and clean your roma tomatoes.
Add everything to a blender and blend until smooth.
Toast the vermicelli noodles along with a diced onion until it is golden brown.
Add the tomato broth that you blended directly into the pot.
Making the broth
You will need to use roma tomatoes, an onion, garlic, and tomato bouillon (caldo de tomate), which has a hint of chicken bouillon in it. Add all of these ingredients to a blender, and cover them with water.
Turn the blender on high and blend them up until everything is smooth, about 2-3 minutes.

Soup Base
- 2 whole Roma tomatoes
- ½ White onion
- 3 cloves Garlic peeled
- 2 tablespoons Caldo de tomate tomato bouillon w/ chicken flavor
Fideo
- 1 tablespoon Vegetable oil
- 8 cups Water or vegetable stock
- 1 ½ cup Fideo vermicelli pasta
- 1/4 cup Onion diced (optional)
- 1/4 teaspoon Dried oregano
- 1 tablespoon Cilantro chopped (optional
Garnish
- Cilantro, lime wedges, queso fresco, sliced radish
Instructions
- Add the tomato, onion, garlic, caldo de tomate, and water or vegetable broth into a blender and blend on high until everything is fully combined. Set this aside and begin toasting your fideo pasta.
- Pour the vegetable oil to a heavy bottom pot and heat it up over medium heat for 1-2 minutes. Once the oil is hot, gently pour the vermicelli noodles into the pot, along with the diced onions.
- Stir the noodles and onions around constantly so that they can get toasty and brown on all sides. You will brown the pasta for about 3 minutes, until they are all golden brown- but not burnt.
- Gently pour the tomato sauce that you made, into the pot with the fideo, sprinkle in your dried oregano and chopped cilantro and stir everything together, and bring it to a boil. Once it is boiling, reduce the heat to low and cover the pot with a lid.
- Allow the soup to simmer on low until the noodles are soft and tender, but still have a little bite to them. This should take about 12-15 minutes.
- Serve right away, add your favorite garnishes, and ENJOY!
