Sopa de Fideo is a delicious comforting Mexican noodle soup made with tender fideo pasta that’s swimming in a rich, delicious tomato broth. It is seasoned to perfection with a blend of roma tomatoes, garlic, and traditional herbs and spices. You’ll experience the taste of traditional Mexican cuisine with every spoonful!
Add the tomato, onion, garlic, caldo de tomate, and water or vegetable broth into a blender and blend on high until everything is fully combined. Set this aside and begin toasting your fideo pasta.
Pour the vegetable oil to a heavy bottom pot and heat it up over medium heat for 1-2 minutes. Once the oil is hot, gently pour the vermicelli noodles into the pot, along with the diced onions.
Stir the noodles and onions around constantly so that they can get toasty and brown on all sides. You will brown the pasta for about 3 minutes, until they are all golden brown- but not burnt.
Gently pour the tomato sauce that you made, into the pot with the fideo, sprinkle in your dried oregano and chopped cilantro and stir everything together, and bring it to a boil. Once it is boiling, reduce the heat to low and cover the pot with a lid.
Allow the soup to simmer on low until the noodles are soft and tender, but still have a little bite to them. This should take about 12-15 minutes.
Serve right away, add your favorite garnishes, and ENJOY!
