Roasted Cheesy Ranch Potatoes

Ingredients

  • 4 Yukon gold potatoes
  • 1 tablespoon Olive oil
  • 1 packet Ranch seasoning mix
  • 1 teaspoon Paprika
  • 1 teaspoon Black pepper
  • ½ cup Cheese shredded
  • Salt to taste

Instructions

  • Preheat your oven to 375°F. Line a sheet pan with parchment paper and set aside.
  • Cut your potatoes up into about 1 inch cubes and toss them in a large bowl. Drizzle the olive oil all over the potatoes.
  • Now sprinkle in your seasonings, including the ranch mix, paprika, and black pepper. Use a spoon or some tongs to toss the potatoes around in the mixture until they are fully coated.
  • Spread the seasoned potatoes out on  the lined sheet pan in one even layer. Place the pan in the oven and bake for 25 minutes, flipping the potatoes halfway through. 
  • Pull the potatoes out of the oven and sprinkle all of the cheese over the top. Place it back in the oven and let the cheese melt for the last 5 minutes.
  • Remove them from the oven and serve right away.

Any potato can be used in place of russet potatoes
