Roasted cheesy ranch potatoes are salty, tangy, savory potatoes topped with melty cheese for a delicious side dish. You're just 30 minutes and a handful of ingredients away from the best ranch potatoes!
Preheat your oven to 375°F. Line a sheet pan with parchment paper and set aside.
Cut your potatoes up into about 1 inch cubes and toss them in a large bowl. Drizzle the olive oil all over the potatoes.
Now sprinkle in your seasonings, including the ranch mix, paprika, and black pepper. Use a spoon or some tongs to toss the potatoes around in the mixture until they are fully coated.
Spread the seasoned potatoes out on the lined sheet pan in one even layer. Place the pan in the oven and bake for 25 minutes, flipping the potatoes halfway through.
Pull the potatoes out of the oven and sprinkle all of the cheese over the top. Place it back in the oven and let the cheese melt for the last 5 minutes.
Remove them from the oven and serve right away.
