Tomato Cucumber and Onion Salad

Cucumber onion salad is a light, refreshing medley of diced cucumbers, tomatoes, and onions tossed in a homemade Italian dressing. This easy veggie side dish is perfect for spring and summer BBQs.

Ingredients

  • 1 whole English cucumber thinly sliced
  • 2 Roma tomatoes chopped
  • ½ Red onion thinly sliced

Dressing for cucumber salad:

  • 2 tablespoons Olive oil
  • 1 tablespoon Red wine vinegar
  • ½ tablespoon Dijon mustard
  • ½ tablespoon Sugar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Salt adjust to taste

Instructions

  • Thinly slice your cucumber and onions, and roughly chop the tomatoes and place them all in a large bowl that has a lid.
  • Next, prepare the dressing by combining the olive oil, red wine vinegar, dijon mustard, sugar, garlic powder, italian seasoning, and salt. 
  • Use a jar with a lid and shake the dressing up until the dressing is combined, or place the dressing in a bowl and use a whisk to mix it up well.
  • Once the dressing is fully combined, pour it all over the cucumber salad. Use a wooden spoon to gently fold the dressing into the salad so that everything is fully coated. 
  • Serve right away, or cover the bowl and refrigerate up to 5 days.
