Fajita veggies are a fresh, bright, flavorful mix of grilled bell peppers and onions. Although they are delicious in a fajita, they work great for meal prep too enjoy them as a side dish with your favorite protein.
Cut the bell peppers in half and remove the stems and seeds. Now slice the bell peppers into thin slices, and set aside in a bowl. Next, thinly slice the onion and place it in the bowl with the peppers.
Drizzle 1 tablespoon of the olive oil into the bowl directly over the peppers and onions. Now sprinkle in all of the seasonings including the seasoned salt, cumin, chili powder, and garlic powder.
Use tongs or a wooden spoon to mix the peppers with the seasonings until everything is fully coated.
Warm up a skillet over medium heat, and drizzle in the other tablespoon of olive oil. Once it begins to lightly smoke, gently add your fajita veggies into the skillet.
Cook them for about 10-12 minutes, stirring occasionally so that they do not burn and they cook evenly.
Once the fajita veggies are tender crisp, remove them from the skillet and serve immediately or store them in an airtight container.
