Super Tasty Seafood Pasta Salad

Seafood pasta salad is a tasty medley of shrimp, imitation crab, and diced veggies tossed with Italian dressing and noodles. Serve this easy seafood pasta salad as a light side at a summer BBQ, holiday meal, or weeknight dinner.

Ingredients

  • 1 pound Pasta penne, spiral, or preferred shape
  • ½ pound Shrimp seasoned and cooked
  • 1 cup Imitation crab chopped into pieces
  • 1 cup Cherry tomatoes diced
  • ½ cup Cucumbers diced
  • ¼ cup Red bell pepper diced
  • ¼ cup Yellow bell pepper diced
  • ¼ cp Green bell pepper diced
  • 1 16 oz bottle Italian dressing
  • 1 tablespoon Old bay seasoning
  • 2 teaspoons Seasoned salt
  • 2 teaspoons Black pepper
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Oregano

Instructions

  • Cook the Pasta: Boil a pot of salted water and cook the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.
  • Prepare the Seafood: Add a teaspoon of olive oil to a skillet over medium heat. Season the cleaned, peeled, and thawed shrimp with salt and pepper. Saute the shrimp in a skillet over medium heat for 1-2 minutes on each side. 
  • Remove the shrimp from the skillet and let it cool. Now cut the shrimp into small pieces (or leave them whole if they are small). Next, chop the imitation crab into bite size pieces. 
  • Mix Ingredients: In a large mixing bowl, combine the cooked pasta, seafood, cherry tomatoes, diced peppers, and chopped cucumber.
  • Combine and Chill: Pour the dressing over the pasta and seafood mixture. Sprinkle in the seasonings including the old bay seasoning, seasoned salt, pepper, garlic powder, and oregano. Toss everything together gently until well combined and evenly coated with the dressing.
  • Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together. Before serving, give it a final toss and adjust seasoning if needed.
  • Serve: Garnish with a few fresh parsley leaves or a drizzle of extra-virgin olive oil before serving. Enjoy your seafood pasta salad!
