Ingredients

  • 5 pounds Apples cored and chopped
  • 1 cup Light brown sugar packed
  • 1/2 cup Granulated sugar
  • 1 tablespoon Cinnamon
  • ¼ teaspoon Salt
  • teaspoon Allspice or ground cloves
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Lemon juice optional but recommended

Instructions

  • Start by thoroughly washing your apples. It’s important to remove any dirt or residue from the skin. You DO NOT have to peel the apples for this recipe. Cut them in half, then in half again, and remove the core and seeds.
  • Now slice them into even pieces, and cut them into chunks. This ensures they cook evenly. Small, bite-sized pieces work best. Consistency in size helps achieve a smooth texture in the apple butter.
  • Add the apple chunks into the Instant Pot. Sprinkle in the brown sugar, white sugar, cinnamon, spices, vanilla, and lemon juice. Toss the mixture gently, ensuring even distribution.
  • Secure the Instant Pot lid and set it to cook on high pressure for about 10 minutes. It's crucial to check the seal. This helps maintain proper pressure.
  • Once the cooking cycle completes, let the pressure release naturally. This step takes time but is essential. It allows the flavors to meld and develop.
  • Once the pressure has safely released, remove the lid. Use an immersion blender to blend the tender apples until they are super smooth. If you do not have a hand held blender, you can transfer the apples into a regular blender and blend on high for 2 minutes until smooth.
  • The goal is a smooth, thick consistency. Blend until you achieve this texture. If you prefer it chunkier, blend it a little less.
  • Taste and adjust sweetening if necessary. A dash more sugar or honey can enhance sweetness. Your amazing apple butter is now ready to enjoy!

Notes

To thicken: Once the mixture is smoothed to your liking, set the Instant Pot to simmer and simmer for 5 minutes, stirring constantly to thicken it a bit.
