Dice your potatoes up into ¼ inch size cubes and rinse them off in cold water. Then dry them off thoroughly with a paper towel.
Place the diced potatoes in a large bowl and add the red and yellow bell pepper, along with the diced onions into the bowl with the potatoes.
Now drizzle the olive oil over the potatoes and sprinkle in the all purpose seasoning, the cajun seasoning, garlic powder, onion powder, paprika, and black pepper.
Use a large spoon and mix up the potatoes, peppers, and onions very well until all of the olive oil and seasonings are fully coating the potatoes and peppers and onions.
Heat up a large skillet (that has a lid) over medium high heat. Once the skillet is hot, gently pour the potato mixture into the skillet and use a spatula to spread it out into one even layer in the pan.
Cover the skillet with a lid and let the potatoes simmer for 3-5 minutes. Remove the lids from the skillet and stir the potatoes around, then cover it back up and cook for another 3-5 minutes.
The potatoes should be fork tender now. Remove the lid and allow the potatoes to fry in the skillet for 2-3, turning as needed, so that they can brown and cook evenly on each side.
Remove the skillet from the heat and serve right away. And enjoy!
