Easy Chipotle Black Beans Recipe

This copycat Chipotle Black Beans recipe is just as healthy and flavorful as the fast food side dish. Serve them over rice bowls or add them to burritos, quesadillas, and salads.

Ingredients

  • 1 tablespoon Olive oil
  • ½ Yellow onion diced
  • 1 teaspoon Garlic paste
  • 2 cans 15 ounce Black beans drained and rinsed
  • 1 cup Water
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground oregano
  • 1 Bay leaf
  • 2 teaspoons Salt or to taste
  • 1 teaspoon Pepper

Instructions

  • Heat up a large pot over medium heat on the stove. Add the olive oil into the pot and let it heat up for about 30 seconds. Now add in the diced onions and saute them for 2 minutes, stirring constantly. 
  • Once the onions are translucent, stir in the garlic paste and saute for about 10-15 seconds. Now pour in the rinsed and drained beans. 
  • Pour the water over the beans, and add in your seasonings including the ground cumin, oregano, the bay leaf, salt and pepper. Stir everything together until it is fully incorporated. 
  • Cover the pot with a lid and and reduce the heat to low and simmer for 30 minutes. Check on the beans occasionally to ensure they do not need more water or they aren’t sticking to the bottom of the pot.
  • Taste for seasoning and add more salt if desired. Serve right away, and enjoy!
